Ashford Castle is a 5 star resort hotel, located on the banks of Lough Corrib in Co Mayo (West Coast of Ireland). We are a 13th century castle which in 1939 opened it doors as a luxury resort hotel which offers 83 rooms overlooking Lough Corrib, one of Ireland’s premier salmon fishing lakes. Georges V dining room, is our fine dining option and Cullens at the Cottage, our informal option. Our Executive Head Chef is Stefan Matz, who has been the recipient of a Michelin Star and Head Chef is Guido Bolz. The Dining Experience is a key attraction for guests who stay in the Castle – Stefan’s fame and culinary expertise are renowned. He was awarded best chef in Ireland in 2010 and over the years has received a Michelin Star. His food ethos is very simple....good produce, locally sourced, properly cooked and presented result in succulent and flavoursome dishes – a unique dining experience. Our food philosophy is very simple – we source organic and naturally grown produce locally and convert it into exquisite dishes that are a feast for the eyes and taste buds! The Drawing Room is an ‘occasions’ food option – guests enjoy morning coffee, lunch (fine dining with a lightness to the menu) and Lady Ardilaun’s Afternoon Tea is a popular afternoon activity. In the evening Guests will dine, preferring the less formal setting of the Drawing Room to the Restaurant and will enjoy after dinner drinks with entertainment here. It’s a lovely working environment – ideal for people who enjoy being in the country side and the natural scenic beauty of Connemara.
